1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • 1 (15-ounce) can diced tomatoes, undrained
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 cup vegetable broth
  • 1/2 cup pitted kalamata olives, halved
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Couscous or crusty bread, for serving

  • Preparation Process:

    1. Season the Chicken: In a bowl, toss the chicken cubes with olive oil, oregano, thyme, red pepper flakes, salt, and pepper.
    2. Sauté the Aromatics: Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.
    3. Add the Chicken: Add the seasoned chicken to the skillet and cook until browned on all sides.
    4. Combine the Ingredients: Pour in the diced tomatoes, chickpeas, vegetable broth, and kalamata olives. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened.
    5. Finish and Serve: Stir in the fresh parsley. Serve hot over couscous or with crusty bread.

    Total Time: 45 minutes

    A Mediterranean Feast

The Mediterranean Dreamboat is a versatile dish that can be adapted to suit your preferences. For a vegetarian twist, substitute the chicken with firm tofu or eggplant. To add a touch of spice, increase the amount of red pepper flakes. And for a more indulgent meal, serve it with a side of roasted vegetables or a Greek salad.

This dish is a testament to the beauty of Mediterranean cuisine. It brings together the flavors of Greece, Italy, and the Middle East, creating a harmonious blend that is both comforting and exciting. Each bite is a journey through the sun-kissed landscapes of the Mediterranean, a reminder of the simple pleasures of good food and good company.
