1 teaspoon vanilla extract
1/4 cup dark rum (optional)
1/4 cup packed light brown sugar
1/4 cup unsalted butter, melted
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch of salt
2 ripe bananas, sliced
1/4 cup chopped pecans or walnuts
Preparation:
1. Prepare the Custard:
In a medium saucepan, whisk together the condensed milk, heavy cream, vanilla extract, and rum (if using).
Heat over medium-low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
Remove from heat and let cool slightly.
2. Assemble the Pudding:
Preheat your oven to 350°F (175°C).
Butter a 9×13 inch baking dish.
Cut the cooled banana bread into 1-inch cubes.
In a large bowl, combine the bread cubes, brown sugar, melted butter, cinnamon, nutmeg, and salt.
Toss to coat evenly.
Layer half of the bread mixture in the prepared baking dish.
Pour half of the cooled custard over the bread.
Top with half of the banana slices and half of the nuts.
Repeat the layers with the remaining bread, custard, bananas, and nuts.
3. Bake the Pudding:
Place the baking dish in a larger baking pan.
Pour hot water into the larger pan, reaching about halfway up the sides of the smaller dish.
Bake for 45-50 minutes, or until the pudding is set and golden brown.
4. Serve:
Let the pudding cool slightly before serving.
Dust with powdered sugar and serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.
Total Time: 1 hour 30 minutes
