For the Marinade:

  • 1 pound boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 2 tablespoons calamansi juice (or lime juice)
  • 1 tablespoon brown sugar
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground black pepper
  • For the Stir-Fry:
  • 2 tablespoons vegetable oil
  • 1 cup sliced bell pepper, assorted colors
  • 1 cup sliced onion
  • 1 cup snow peas, trimmed
  • 1 cup baby corn, halved
  • 1 cup cooked rice
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon honey
  • 1 teaspoon cornstarch
  • 1/4 cup water

  • Preparation:

    1. Marinate the Chicken: In a bowl, combine the chicken, soy sauce, calamansi juice, brown sugar, garlic, and black pepper. Marinate for at least 30 minutes, or preferably overnight, in the refrigerator.
    2. Prepare the Stir-Fry: Heat the vegetable oil in a large wok or skillet over high heat. Add the marinated chicken and stir-fry until browned on all sides. Remove the chicken from the wok and set aside.
    3. Sauté the Vegetables: Add the bell pepper, onion, snow peas, and baby corn to the wok. Stir-fry for 2-3 minutes, or until the vegetables are crisp-tender.
    4. Create the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, honey, cornstarch, and water.
    5. Combine and Simmer: Return the chicken to the wok, along with the cooked rice. Pour the sauce over the mixture and stir to coat. Bring to a boil, then reduce heat and simmer for 2-3 minutes, or until the sauce thickens.

Total Time: 45 minutes (including marinating time)

    Serving Ideas:

Serve the Fusion Fiesta over a bed of steamed rice, garnished with fresh cilantro and a drizzle of sesame oil.

  • For a more substantial meal, serve with a side of garlic rice or a refreshing cucumber salad.
  • To elevate the dish, top it with a fried egg or a dollop of sriracha mayo.
